Here is our menu plan for the week!
Sunday: Tortellini Crock pot Soup
Monday: Skinny Enchiladas (I cook the chicken in the pressure cooker I got for Christmas, which I totally love! It is so easy to make the chicken and then easily shred it for recipes such as this)
Tuesday: Turkey sausage (package), Cheesy Broccoli Quinoa, steamed spinach
Wednesday: Spicy Quinoa Stuffed Avocado
Thursday: General Tso's Chicken with fried rice (using the SunBird seasoning packets)
Friday nights we usually eat out. Saturdays we either eat out or we're on our own :)

Menu Plans
I'm going to start posting our menus again. Years ago I used to post our menus, but when Facebook became more popular and I stopped blogging and therefore quit posting our menu plans.
I've had several friends ask me to share a few sample menu plans...so here are our last few weeks of menus.
Enjoy! I'll post new menu plans on Sunday nights:

Sunday: Slow Cooker Buffalo Chicken Chili (new recipe)
Monday: Chicken Spaghetti
Tuesday: Egg Rolls (frozen) with Quinoa 7 Vegetable stir fry (new recipe)
Wednesday: Sloppy Joes, asparagus, sweet potato fries
Thursday: Tortellini Crock pot soup (new recipe)

Sunday: Pot roast, green beans and Slow Cooker Mac'n'Cheese
Monday: Spicy Quinoa Stuffed Avocado (we LOVE this stuff! I alter the recipe by not making the "sour cream" listed)
Tuesday: Soup (like, out of the can, heat it on the stove)
Wednesday: Biscuits and gravy (Grands Jr biscuits (100 cal each) and Tennessee gravy)
Thursday: Chicken Ranch Tacos (a Lotz favorite) with Mexican Quinoa (new recipe)

Sunday: Meatloaf and pressure cooker veggies (carrots & onions)

Day 4: Elf on the Shelf
It took Ryan some time to find Jolly this AM.
Probably because he was hiding in the fridge!
(Also, if you want your son to drink a gallon of milk in a day, dye it green and slap a stuffed Elf on the container...that kid drank milk ALL day!)

(You'll notice quite a few superhero themed set-ups this year...Ryan is totally into superheros right now).

Jolly delivers Ryan a Christmas tree each year.
This year Jolly hijacked Ryan's new Teenage Mutant Ninja Turtle ornament that Grandmama bought him. Ryan was *NOT* happy about it!

North Pole breakfast 2013!!
We had another super fun North Pole Breakfast!
The second Ryan came out of his room and noticed the marshmallow trail, he took off running and screaming, "Jolly's here!!"
We had a great time and I'm so happy we found this tradition to incorporate into our holidays.
